Butternut squash is a versatile vegetable. It has a mellow and buttery flavor that can be made into dishes that are sweet or savory. One of my favorite recipes for butternut squash is actually both sweet and savory. It is simple to make, and the bright orange flesh of the squash is packed full of healthy vitamins. The hardest part of the recipe is getting to that flesh. Winter squashes are known for their hard outer shell or peel. To even cut through them can be daunting, but once you do, the reward is great. The dense sweet pulp is then simmered with a glaze that is sweet and just a bit spicy. It makes a great side dish for steaks or chops, and the leftovers can be blended to make a creamy soup.
